Lucknow for the love of kababs.
During my first trip to Lucknow last year, I was accompanied with a Lucknowite to the Tunday kabab which is apparently a specialty of Lucknow. Lucknow has been famous for its kababs and if the Tunday kabab is one of the most famous ones from there, it was irresistible not to go try it out.
This kabab is softer than soft for it falls apart if you try to hold it within your fingers.The Tunday kabab is a flat pattie like kabab which is really soft and delicious.
But what do you mean by Tunday?
While treating our tongue with these delicious kababs we came across the interesting story behind the origin.The story goes like – There existed a crazy kabab lover,a Nawab (royal family member), but due to old age he lost his teeth and was unable to enjoy the kababs. He therefore, setup a contest that whoever created the softest and most succulent kababs would enjoy royal patronage henceforth.
Haji Murad Ali the talented chef created such a kabab that won the Nawab’s heart. This kabab maker was apparently handicapped with one hand.
In India, a person with a leg disability is called Langdey, while a person with a hand disability is called Tunday, hence the name Tunday Kabab. The secret recipe apparently has 160 spices (who knew there were 160 spices out there) including Sandalwood. The recipe is a family secret and is passed down to the generations by the ladies of the house.
